High Phenolic Olive Oil: How to Verify the Number on the Bottle

High phenolic olive oil has gone from a specialist term to a shelf category in about five years, and the numbers on the bottles have got larger as it happened. You will see 300, 500, 800, occasionally four figures — all described as polyphenols, all presented as evidence of quality, and very few of them measured by the same method or checked by anyone independent. This one is about the buying decision: which figures mean something, what a certificate of analysis actually shows, and how to tell a genuinely high phenolic oil from a well-marketed one.

The Short Answer
- Only one polyphenol figure has a legal meaning. Under Regulation (EU) No 432/2012, an olive oil may carry the authorised claim about polyphenols only if it contains at least 5 mg of hydroxytyrosol and its derivatives per 20 g of oil — and the condition is written in exactly that form.
- The per-kilogram figures attached to this claim are not in the instrument. The annex states no threshold in milligrams per kilogram at all, and it never uses the word nutraceutical. Any per-kilogram number quoted against this claim is somebody's arithmetic, not the regulation's own words.
- That arithmetic fails because it conflates two different fractions. Total polyphenols is an aggregate; hydroxytyrosol and its derivatives is a narrower set inside it. A figure for one cannot be converted into a figure for the other.
- "High phenolic" is not a legal grade. Unlike extra virgin, it is not defined, not audited and not protected. Any producer may print it.
- Total biophenols is the number most producers quote. It is determined by the International Olive Council method and expressed as tyrosol equivalents — a larger figure than the claim-relevant one, and a different measurement.
- A figure without a date, a lab and a method is not a measurement. It is a marketing statement that happens to contain a number.
- Phenols fall as the oil ages. A figure measured at pressing describes the oil at pressing, not the bottle in your hand eighteen months later.
- We do not publish a polyphenol figure for our own oil yet, because our first harvest has not yet been analysed. When it has, the panel we have specified will be published in full — including the parts that are less flattering.
What "High Phenolic" Actually Means — and What It Does Not
Extra virgin is a defined grade. An oil either meets the chemical and sensory limits set by the International Olive Council — free acidity no higher than 0.8%, peroxide value no higher than 20 meq O₂/kg, UV absorbance within set bounds, and a sensory panel finding no defect — or it does not, and the label is then unlawful.
High phenolic has no such structure behind it. There is no threshold a producer must clear, no body that audits the claim, and no penalty for using it loosely. The phrase means whatever the person printing it wants it to mean.
That is not an argument for ignoring phenolic content. It is an argument for asking which number, measured how, and when.
The Only Threshold That Carries Legal Weight
Regulation (EU) No 432/2012 authorises a specific claim for olive oil polyphenols — that they contribute to the protection of blood lipids from oxidative stress — and the annex attaches conditions of use to it. We read the wording on legislation.gov.uk before printing it here. It says:
"The claim may be used only for olive oil which contains at least 5 mg of hydroxytyrosol and its derivatives (e.g. oleuropein complex and tyrosol) per 20 g of olive oil. In order to bear the claim information shall be given to the consumer that the beneficial effect is obtained with a daily intake of 20 g of olive oil."
Read it again and notice what is not there. There is no threshold expressed in milligrams per kilogram anywhere in the instrument. The word nutraceutical does not appear in it either. Per-kilogram figures are quoted against this claim across a great many retailer pages and blogs, and they are conversions somebody has done rather than anything the regulation says.
Two points of discipline follow. First, this is a condition of use for a form of words on a label — a statement about the oil's composition, not a licence to say the oil treats or prevents anything. Second, and this is where the bogus conversions come from, the condition is measured against hydroxytyrosol and its derivatives specifically, not against total phenolic content. Those are two different fractions of the same oil. Total polyphenols is an aggregate covering oleuropein and ligstroside derivatives, lignans, flavonoids and phenolic acids together; the condition names a narrower set inside that aggregate. A number for one cannot be turned into a number for the other, and any arithmetic that treats them as interchangeable produces a threshold nobody legislated.
You can see the distinction handled properly in British retail. Waitrose lists a Greek extra virgin oil from Odysea whose label declares its hydroxytyrosol and derivatives against the claim condition, per 20 g, alongside a separate figure for the oil's polyphenol content — two different measurements, printed where a shopper can read both and tell them apart.

Two Different Numbers, Often Presented as One
Most high phenolic marketing quotes total biophenols, determined by the International Olive Council's official HPLC method, COI/T.20/Doc. No 29. That method extracts the polar phenolic fraction and reports it in mg/kg expressed as tyrosol — a single aggregate covering oleuropein and ligstroside derivatives, lignans, flavonoids and phenolic acids.
The claim in Regulation 432/2012 concerns a narrower set: hydroxytyrosol and its derivatives. So an oil reporting 600 mg/kg of total biophenols is not reporting 600 mg/kg of the compounds the claim is written about. The two figures are related but they are not interchangeable, and a bottle that quotes only the larger one has told you less than it appears to.
None of this makes total biophenols a bad measure. It is the standard industry figure, it is genuinely informative about the style and stability of the oil, and comparing two oils on it is fair as long as both were tested the same way.

How to Read a Certificate of Analysis
A certificate of analysis is the document an independent laboratory issues after testing a specific sample. It is the difference between a producer's assertion and a measurement, and it is worth knowing what a complete one contains.
Four things make a certificate useful rather than decorative: a named laboratory, a date, a batch or lot reference tying the result to the oil you are buying, and the method used. A figure quoted without those four is a claim about a number, not a number.
The phenolic result is rarely the only thing on the page, and the other rows are often more revealing about how carefully the oil was made.

Where a High Figure Comes From in the First Place
Phenolic content is decided in the grove and the mill, not in the marketing. Three things move it more than anything else.
Harvest timing is the largest single lever. Olives picked early, while still green and hard, yield less oil per tonne but a markedly more phenolic one; the same trees picked weeks later give more oil and a softer, rounder, lower-phenolic result. A producer chasing a high number is accepting a smaller yield to get it, which is why early-harvest oils cost what they do.
Cultivar matters next. Some varieties are naturally phenolic — Picual, Coratina and Koroneiki are the usual examples — and some are naturally gentle.
Speed and temperature at the mill finish the job. Fruit pressed within hours of picking, at low temperature, retains what it arrived with; fruit left in crates to warm loses it before the mill is switched on. Our guide to fresh-pressed olive oil goes into the timing in more detail.

The Number Decays, and Nobody Reprints the Label
This is the part the category is quietest about. Phenolic compounds are consumed as the oil oxidises — that is a large part of what they are doing in the bottle — so the figure falls steadily with time, and faster with warmth, light and air. A certificate dated at pressing is accurate about the oil at pressing. It says progressively less about a bottle opened a year and a half later.
Three practical consequences follow. Buy on harvest date rather than best-before, because one tells you the oil's real age and the other tells you the retailer's shelf policy. Buy dark glass or tin, since light is the fastest of the three destroyers. And buy a size you will finish — this is the one place where buying olive oil in bulk works directly against you, because a five-litre tin of a phenolic oil spends most of its life becoming a less phenolic one. The Honest Case Against Chasing the Number
Three objections deserve a straight answer.
"Most of these figures are marketing." A fair number of them are, and the absence of any legal definition is exactly why. The remedy is not to distrust every figure but to apply the four tests — named lab, date, batch reference, method — and to notice how quickly most claims fail one of them.
"High phenolic oil is unpleasant to eat." Sometimes, yes. Bitterness and the peppery catch at the back of the throat are formally positive attributes in sensory assessment, and they track phenolic content directly — but a strongly phenolic oil will dominate delicate food, and an oil you do not enjoy is one you will not finish. Taste before you commit to a case of it.
"You do not publish a figure yourselves." Correct, and we are not going to talk our way around it. Our first harvest has not yet been analysed, so there is nothing honest to publish. What we have done is specify the panel in advance — total polyphenols by HPLC, free fatty acidity, peroxide value, the K-values and a sensory assessment — so that the results are commissioned before we know what they will say, rather than after.

We will not tell you Sidr & Stone is the highest phenolic olive oil you can buy — that is precisely the claim this article asks you to be sceptical of, and we have no figure to put behind it. What we will say is that the conditions that produce a phenolic oil are the ones we have built the product around, and that when the first harvest is tested, the certificate will be published whatever it says.

What counts as a high phenolic olive oil?
There is no legal definition. The only threshold with regulatory standing is the condition attached to the authorised EU claim: at least 5 mg of hydroxytyrosol and its derivatives per 20 g of oil. That condition is written per 20 g, it is not stated in milligrams per kilogram, and it names a narrower fraction of the oil than the total biophenols figure the trade quotes. In practice producers tend to reach for the phrase somewhere in the mid hundreds of mg/kg of total biophenols, but that is convention, not law.
Why do total polyphenols and the claim condition get confused?
Because they are two different fractions of the same oil, and the numbers on the bottle rarely say which is which. Does a bitter, peppery oil always mean a high phenolic one?
The two track each other closely, and a trained sensory panel scores bitterness and pungency for exactly that reason. It is a good indicator rather than a measurement — perception varies between people, and it will not distinguish 300 mg/kg from 500.
How quickly does the polyphenol figure fall?
Steadily, and faster in warmth, light and air. There is no single rate, because it depends on the oil's starting composition and how it is stored — which is why a harvest date and dark glass matter more than a large number printed at pressing.
Is a certificate of analysis worth paying attention to?
Only if it names the laboratory, carries a date, references the batch and states the method. A figure quoted without those four is not verifiable, and an unverifiable figure is a marketing claim in numerical dress.
Where can I buy a high phenolic olive oil?
Specialist retailers and producers direct are the most reliable routes, and a few British supermarkets now range one — Waitrose stocks a Greek oil declaring the claim condition on the label. Look for the harvest year, the cultivar and a published analysis rather than the phrase itself.
Is olive oil a medicine?
No. Olive oil is a food, not a medicine. It has a long traditional history — including being honoured in the Prophetic Sunnah — and a substantial body of modern research, particularly around polyphenols, cardiovascular health, and the Mediterranean diet pattern. It can be a worthwhile part of a healthy routine, but it does not cure diseases and is not a substitute for medical care. Be cautious of any olive oil marketed with specific disease-cure claims.
Final Thoughts
The phrase high phenolic olive oil is doing a lot of work on a lot of labels, and almost none of that work is regulated. The useful response is not cynicism but a short checklist: which figure, measured by which method, by which laboratory, on which batch, and how long ago — and, before all of those, which fraction of the oil the number actually describes.
Applied honestly, that checklist thins the field quickly. It also tends to lead you towards producers who are making small quantities of early-harvest oil and pressing it fast — because those are the only conditions under which a high figure arises in the first place, and a producer doing that work generally wants to show you the paperwork.
The number is worth caring about. It is just worth caring about accurately, which means holding your own suppliers to the same standard as everyone else's.
