An olive oil glass bottle looks like a packaging decision and is really a preservation decision. Glass itself is close to ideal for oil — inert, impermeable to oxygen, endlessly recyclable, and it does not pass anything into what it holds. The variable that actually matters is colour. A clear bottle and a dark green bottle can hold the same oil on the same shelf and be measurably different products three months later, because light does something to olive oil that heat and air alone do not. - Dark green, amber or UV-protective glass is better for olive oil than clear glass, because it filters the ultraviolet and blue wavelengths that drive light-induced oxidation.
- The mechanism is specific and slightly ironic: chlorophyll and its breakdown products, which give good extra virgin oil its green colour, act as photosensitisers — under light they generate singlet oxygen, which attacks the oil's fatty acids far faster than ordinary oxidation does.

Why Dark Glass Beats Clear Glass
Dark glass protects olive oil by absorbing the short-wavelength light that starts the damage. Ultraviolet and blue light carry enough energy to set off photo-oxidation in the oil; green and amber glass absorb much of that range before it reaches the contents, while clear glass transmits nearly all of it. The oil is not being kept in the dark, exactly — it is being kept out of the wrong part of the spectrum.
The practical consequence is easy to see. An oil in clear glass under supermarket lighting or on a windowsill loses its green notes and its peppery bite noticeably faster than the same oil in dark glass beside it. This is also why a clear bottle is a reasonable signal about a producer's priorities. A brand that puts an oil it has taken trouble over into clear decorative glass has chosen how the bottle photographs over how the oil keeps. That is a choice, not a crime — but it tells you something.

What Light Actually Does: Photo-Oxidation and the Chlorophyll Problem
Ordinary rancidity in oil is autoxidation: a slow free-radical chain reaction between oxygen and the unsaturated fatty acids, which needs an initiator and then propagates on its own. It is the reason a half-empty bottle goes off faster than a full one.
Light introduces a second, faster route. Extra virgin olive oil contains chlorophylls and their degradation products, pheophytins — the pigments responsible for the green cast of a fresh unrefined oil. Under light these pigments behave as photosensitisers: they absorb light energy and transfer it to dissolved oxygen, converting it into singlet oxygen, a much more reactive species than the oxygen in air. Singlet oxygen attacks the double bonds in the oil's fatty acids directly, without needing the free-radical initiation step, and it does so at a rate orders of magnitude greater than ordinary autoxidation.
The irony is worth sitting with. The green colour that signals an unrefined, well-made, chlorophyll-rich oil is the same compound that makes that oil especially vulnerable to light. A refined pale oil has had most of those pigments stripped out and is, in this one narrow respect, less light-sensitive. That is not an argument for refined oil; it is an argument for a dark bottle.
The oil does have some defences — tocopherols and polyphenols act as antioxidants and quench some of that reactivity — but they are consumed in the process. Glass, Tin or Plastic: What Each Material Actually Does
Comparing containers usually turns into a taste argument. It does not need to. The three things that matter are light transmission, oxygen permeability, and whether the material interacts with the oil.

Two points that get lost in the usual glass-versus-tin argument. First, glass's oxygen barrier is perfect but the bottle's is not — the closure is the leak, and a cheap cork or a loose cap undoes the material advantage. Second, a tin beats every glass bottle on light and loses on everything to do with using it: you cannot see the level, it dents, and once opened it reseals badly. Is Coloured Glass Alone Enough?
No — and this is where a lot of packaging marketing overreaches. Dark glass is a filter, not a wall. It reduces the energy reaching the oil; it does not eliminate it. An oil in a green bottle left in daylight will still degrade, just more slowly than the same oil in clear glass.

The honest hierarchy is: where the bottle is stored matters more than what colour it is. A clear bottle in a closed cupboard will outlast a dark bottle next to the hob. Colour buys you insurance for the times when storage is imperfect — the shop's shelf, the delivery van, the fortnight the bottle spends on the worktop because it is being used. Those are real conditions, which is why the colour is worth paying attention to.
Cruets, Dispensers and Pourers: Where Design Fights Chemistry
Table cruets are where good intentions go wrong. The classic Mediterranean cruet is clear glass with a wide mouth and an open spout, and it fails on every axis at once: it lets light in, it lets air in, and it is usually left out on the table. It looks the part precisely because it is the shape everyone remembers, and it treats the oil worse than the bottle it was decanted from.
Better designs exist. Look for a dark glass body with a narrow tapered spout and a hinged or fitted cap that actually closes; a drip-free lip that returns oil to the bottle rather than down the side; and a modest capacity, because a cruet is a serving vessel and not storage. Stainless pourer inserts are fine mechanically, but only useful if they come with a cap.
Oil misters and sprayers deserve a note of their own. They aerate the oil deliberately — that is how they work — and pump reservoirs are usually clear plastic. They are genuinely useful for controlling how much oil goes into a pan, but fill them in small amounts and refill often rather than treating them as a bottle.

Decanting Without Ruining the Oil
Decanting is the standard fix for buying well and storing badly — you buy a tin, which is the best storage format, and keep a small dark bottle in use. Done carelessly it introduces the exact problem it was meant to solve, because every transfer whips air through the oil.
- Decant small amounts often rather than filling a large decanter once.
- Pour slowly down the inside of a funnel so the oil runs rather than splashes.
- Use a bottle the decanted volume nearly fills — headspace is the enemy.
- Make sure both vessels are completely dry; water accelerates spoilage.
- Reseal the tin immediately and put it back in the dark.
- Wash and dry the small bottle between refills instead of topping up old oil with new.
That last point catches people out. Topping up means the oldest oil never leaves the bottle, and it seeds each fresh batch with already-oxidised oil.

What to Do With the Clear Glass Bottle You Already Own
Most people reading this have a clear bottle in the kitchen already, and throwing it away helps nobody. The oil is not ruined; it is simply on a faster clock. The fix is to change where it lives rather than what it lives in.

The Objections Worth Taking Seriously
"I keep mine in a cupboard, so the colour of the glass is irrelevant." Largely true once the bottle is home, and we would rather say so than pretend otherwise. But the bottle's life did not start in your cupboard. It was lit in a warehouse, lit on a shelf, and lit on the counter while you unpacked the shopping. Dark glass covers the part of the journey you do not control.
"I like clear glass because I can see the colour of the oil." Understandable, but colour is not a quality signal. It reflects cultivar and ripeness, not freshness or grade, which is exactly why professional tasting panels use blue glasses so that colour cannot influence the score. Seeing the oil tells you how full the bottle is and very little else.
"Isn't plastic fine if I get through it quickly?" For a fortnight's cooking oil, honestly, yes — and pretending otherwise would be posturing. The problem is that PET is oxygen-permeable over months, so it is a poor choice for anything you intend to keep, and it is the standard format for the largest bottles, which are exactly the ones that last longest. The format and the use case are mismatched.
