Refined Olive Oil: What It Is, How It's Made, and Why You Can't Buy It

Refined olive oil is one of the most misunderstood terms in the category, partly because almost nobody has knowingly bought a bottle of it. It is a genuine legal grade with a legal definition, and it is in a great many kitchens — but not under that name. Refining is an industrial process, not a marketing word: a sequence of chemical and thermal steps that takes an oil which failed the taste and acidity tests and turns it into something odourless, colourless and stable. This article explains what those steps actually do, what they take out, what survives, and why the bottle on the shelf says something else entirely.

The Short Answer

  • Refined olive oil is olive oil that has been chemically and thermally treated to strip out the faults — high acidity, off-flavours, colour and smell — that stopped it qualifying as virgin or extra virgin.
  • The starting material is usually lampante oil: virgin oil from the mill that failed the sensory panel or came in above the acidity limit, and which cannot be sold to consumers as it is.
  • Refining is typically four stages — degumming, neutralising, bleaching and deodorising — and the last of those uses steam under vacuum at temperatures in the region of 200°C and above.
  • Under Annex VII of Regulation (EU) No 1308/2013, refined olive oil is defined as olive oil obtained by refining virgin olive oil, with free acidity of not more than 0.3 grams per 100 grams.
  • You cannot buy it on its own. Article 6 of Commission Delegated Regulation (EU) 2022/2104 permits only four legal names at retail, and "refined olive oil" is not one of them; the refined oil reaches you blended with virgin oil under the name "olive oil composed of refined olive oils and virgin olive oils".
  • That blend is legally barred from carrying a designation of origin on the label, cannot state a harvesting year, and cannot describe its own taste or smell — three signals a good oil uses to prove itself.
  • Refined blends are not dangerous or fraudulent. They are a high-heat cooking fat with the flavour and the polyphenols engineered out, and they should be bought and priced as exactly that.

What Refined Olive Oil Actually Is

Every olive harvest produces some oil that is not good enough to sell as it is. Fruit that sat too long before pressing, olives that fell and bruised, a batch that fermented in the bin overnight — the resulting oil comes out of the mill with high free acidity, a musty or winey taste, or both. In the EU grading system that oil is called lampante virgin olive oil, and it is explicitly not intended for the retail market. Historically it was burned in lamps, which is where the name comes from.

Refining is what happens to it instead. The process does not add anything to the oil that stays in it; it removes things. What comes out the other end is chemically still olive oil — the fatty acid profile is essentially unchanged, so it is still predominantly oleic acid — but it is close to odourless, close to colourless, and stripped of the compounds that gave the original oil its character.

That is worth stating plainly, because both of the usual reactions to refining are wrong. It is not poison, and it is not a swindle. It is an industrial correction process applied to a raw material that would otherwise be waste, and it produces a functional cooking fat. What it does not produce is anything you would want to pour over a tomato.

How Olive Oil Is Refined, Step by Step

Olive oil refining follows the same broad sequence used across the edible oils industry. Each stage targets a different defect, and each takes something out.

Deodorisation is the stage that matters most for what you end up with. It runs hot — industrial deodorisation of edible oils works in the region of 200°C and above — and heat of that order is not survivable by the compounds that make a good oil interesting. Olive oil polyphenols such as oleocanthal and oleuropein degrade with heat and time; the aroma volatiles are, by design, boiled off. Some fat-soluble minor components, including squalene and part of the tocopherol content, survive in reduced amounts.

The result is exactly what the process was designed to produce: a neutral oil with a low free acidity, a long shelf life and a higher smoke point than an unrefined oil, because the free fatty acids and fine particles that make extra virgin start smoking earlier have been taken out.

Why You Will Never See a Bottle Labelled "Refined Olive Oil"

This is the part almost every article on the subject misses. Under EU marketing standards — Commission Delegated Regulation (EU) 2022/2104, which the UK broadly mirrors in retained law — only four legal names may appear on olive oil sold to consumers, and "refined olive oil" is not among them.

So the refined oil does reach you — it simply arrives blended with a proportion of virgin oil to give it back some colour and taste, and it is sold under that third name, usually shortened on the front of the bottle to plain "olive oil", or dressed up as "classic", "mild", "light" or "pure". The restrictions on that category are more revealing than the name. A refined blend must not bear a designation of origin. It may not indicate a harvesting year, because only extra virgin and virgin olive oil may do so. It may not carry organoleptic descriptions of taste or smell, and it cannot use "first cold pressing" or "cold extraction", both of which are reserved for virgin oils produced below 27°C. Read the back label of a bottle that tells you nothing about where the oil came from, when it was pressed, or what it tastes like, and you are usually reading a refined blend — not because the producer is hiding anything, but because the law does not let it say.

Is Refined Olive Oil Worse? An Honest Answer

The reasonable objection to everything above is that this sounds like a specialist producer talking down a mass-market product. So let us be precise about where refined blends genuinely lose and where they genuinely do not.

Where they do not lose much: the fat itself. Refining does not alter the glyceride structure, so a refined blend still has broadly the monounsaturated fatty acid profile that makes olive oil what it is nutritionally. If your reason for using olive oil is that you would rather cook in it than in something else, a refined blend delivers that.

Where they lose a great deal: everything that is not the fat. Polyphenols, chlorophyll and the aroma volatiles are the point of a good extra virgin olive oil, and bleaching and deodorising exist precisely to remove them. The EU's registered health claim for olive oil polyphenols protecting blood lipids from oxidative stress requires at least 5 mg of hydroxytyrosol and its derivatives per 20 g of oil — a threshold a refined oil has no realistic prospect of meeting, because the refining process is designed to strip those compounds out.

The second objection is the smoke point argument: that refined oil is simply better for cooking. It does have a higher smoke point, and for deep-frying at length that is a fair reason to choose it. But smoke point is a weaker guide to cooking performance than it is usually made out to be, and a good extra virgin is more heat-stable in ordinary pan cooking than its reputation suggests — a point we cover in our guide to the different types of olive oil.

The honest summary is that a refined blend is not a worse olive oil so much as a different product with the same botanical origin — and it should be judged, and paid for, on that basis.

When a Refined Blend Is the Sensible Choice

There is a real case for keeping one in the cupboard. Deep-frying a large quantity, roasting at high heat for a long time, greasing tins, or any dish where a peppery bitter note would be a distraction — all of these are jobs where the flavour of a good extra virgin would be wasted, burnt off, or actively unhelpful.

What a refined blend should never be is the only olive oil in the house. Nothing it does justifies paying an extra virgin price, and nothing an extra virgin does can be recovered once the oil has been through a deodoriser. Can you cook with refined olive oil?

Yes, and it is what refined blends are for. The higher smoke point and neutral taste suit deep-frying, long high-heat roasting and baking. Keep an extra virgin for anything where the oil is meant to be tasted.

Is refined olive oil the same as pomace oil?

Does refining olive oil use chemicals?

Refined olive oil is not a scandal and it is not a secret. It is an industrial correction applied to oil that did not make the grade, and the finished blend does a job that a good extra virgin does badly. The problem is not the product; it is that the front label rarely makes the distinction, and the back label legally cannot say much at all.

The practical takeaway is small and useful. If a bottle tells you nothing about origin, nothing about harvest, and nothing about how it tastes, that silence is the answer to your question — and it should be reflected in what you expect from the oil and what you are willing to pay for it. If a bottle does tell you those things, it is because the grade permits it, which is itself a signal.
