Onion Infused Oil: How to Get the Flavour Without the Risk

Onion infused oil looks like the simplest thing in the kitchen: slice an onion, cover it with oil, wait. It is also one of the few home preparations that food-safety authorities name directly. Fresh onion is a low-acid, high-moisture vegetable, and oil seals it away from air. Together they create the anaerobic, low-acid, moist conditions in which Clostridium botulinum spores can germinate and produce toxin. That is not a theoretical worry — sautéed onions were the vehicle in one of the largest restaurant botulism outbreaks recorded in the United States. This article sets out what the risk actually is, what the published guidance actually says, and the three ways to get onion flavour into oil without building the hazard.

The Short Answer
- Fresh onion suspended in oil creates an anaerobic, low-acid, moist environment. The oil itself is not the problem — the fresh allium sitting in it is.
- The US Centers for Disease Control and Prevention gives specific advice for home-made oils of this kind: refrigerate them, and throw away any unused oil after four days.
- The FDA Food Code lists garlic-in-oil mixtures that have not been modified to prevent pathogen growth among its time and temperature control for safety foods — the same handling category as raw meat.
- Onion has its own documented record, not one borrowed from garlic. In October 1983, 28 people were hospitalised in Illinois after eating sautéed onions; 12 required ventilatory support and one later died.
- You cannot see, smell or taste botulinum toxin. The CDC states this plainly, which is why a jar that looks and smells fine tells you nothing at all.
- There are three safe routes: dried onion instead of fresh, a small fresh batch kept cold and used within four days, or a commercially produced oil that has been acidified or otherwise preserved.

Why Fresh Onion in Oil Is the Problem, Not the Oil
Clostridium botulinum is a spore-forming bacterium that lives in soil, which means it arrives in the kitchen on vegetables that grew in the ground. The spores themselves are harmless to most healthy adults. What is dangerous is what they do when four conditions line up at once: no oxygen, low acidity, enough available water, and a temperature they can work in. Oil supplies the first condition by physically excluding air. A fresh onion supplies the second and third, because it is a low-acid vegetable that is mostly water.
That is the whole mechanism. It is not about the oil being dirty, or the jar being unsterilised, or the onion being old. A scrupulously clean jar of freshly sliced onion under good olive oil is exactly the configuration the guidance warns about, because cleanliness does not remove soil spores and oil does not kill them.

One quick disambiguation before we go on, because the search results mix them up: this article is about oil flavoured with the ordinary kitchen onion, Allium cepa. What the Guidance Actually Says
The clearest consumer-facing instruction comes from the CDC, whose botulism prevention guidance says: Refrigerate homemade oils made using garlic or herbs
and Throw away any unused oils made with garlic or herbs after 4 days.
That is a four-day refrigerated life, not a fortnight and not a pantry shelf. On the same page the CDC states that you cannot see, smell, or taste
the toxin that causes botulism.
On the commercial side, the FDA Food Code lists garlic-in-oil mixtures that are not modified in a way so that they are unable to support pathogenic microorganism growth or toxin formation
among the foods requiring time and temperature control for safety. The word doing the work there is modified: acidified, preserved, or otherwise formulated so that the bacterium cannot grow. An unmodified jar has no such protection.

Refrigeration is a real control, but it is a partial one, and this is the part most recipe posts skip. UK industry guidance on chilled foods, drafted with the Quadram Institute and the Chilled Food Association, states that The minimum temperature at which non-proteolytic C. botulinum forms neurotoxin is 3°C
, against 10–12 °C for the proteolytic type. A domestic fridge that drifts above 3 °C — which most do — is therefore not an absolute barrier. Cold buys you time. It does not buy you indefinite time, which is precisely why the CDC attaches a number to it.

Peoria, 1983: The Onion-Specific Record
Most writing on this subject reaches straight for garlic. Onion has its own case, and it is a serious one. MacDonald and colleagues, writing in JAMA in 1985, described 28 people hospitalised in Illinois in October 1983 with signs compatible with botulism. Twelve required ventilatory support, 20 were treated with antitoxin, and one patient died in hospital six months after onset. Case-control studies implicated sautéed onions made from fresh raw onions and served on a sandwich.
The laboratory follow-up is the detail worth carrying away. Solomon and Kautter, in the Journal of Food Protection in 1986, reported that five strains of C. botulinum type A were isolated from 75 raw onions obtained from the same restaurant, and that strains recovered from those onions produced high toxin titres within 48 hours from as few as two spores per gram of sautéed onion. That is the point: the spores were on ordinary shop-bought onions, and the quantity needed was tiny.

Two things follow from reading these three together. The first is that this is a solved regulatory problem on the commercial side and an unsolved habit on the domestic side. The second is that onion was not a substitute vehicle for garlic in some theoretical sense — it was the actual vehicle, in the largest of the three episodes.

Three Safe Ways to Get Onion Flavour into Oil
Use dried onion rather than fresh. This is the simplest change and the one that removes the hazard rather than managing it. Dried onion flakes or onion powder carry very little available water, so the environment inside the bottle is no longer one the bacterium can work in. Warm the oil gently with the dried onion, let it stand off the heat until it cools, strain it through muslin, and bottle it. Keep it cool and dark and use it within a few weeks, as you would any oil you have opened.
Make a small fresh batch, keep it cold, and use it up. If you want the flavour that only fresh onion gives, make a quantity you will genuinely finish. Cook the sliced onion in the oil over a low heat rather than steeping it raw, cool it quickly, strain the solids out completely, refrigerate it immediately, and throw away whatever is left after four days. That four-day limit is the CDC's, not ours, and it is not a suggestion to be rounded up. Do not leave the bottle on the worktop, and do not save it for next month.
Buy one that has been made properly. A commercially produced onion or garlic oil has usually been acidified or formulated with inhibitors, or built on dried rather than fresh aromatics, precisely because the regulator required it. Whichever route you take, the base oil matters for flavour even though it does not change the safety picture. A well-made extra virgin gives you something worth infusing; a tired or heavily refined oil gives you onion-scented nothing. Why Low-FODMAP Cooks Reach for Infused Oil
A large share of the people searching for onion infused oil are not chasing a gourmet flourish. They are following a low-FODMAP diet, in which onion and garlic are restricted because they are high in fructans, and infused oil is the standard workaround. Monash University's FODMAP blog explains the chemistry directly: The reason these oils are low FODMAP is because fructans are water soluble but not fat soluble.
The flavour compounds move into the oil; the fructans largely stay behind in the solids you strain out.
That mechanism is sound, and it is why the technique exists. But in preparing this article we read the most authoritative low-FODMAP page on infused oils we could find, and it does not mention botulism once — it explains the fructan chemistry and then points readers to a commercial product. Nothing about that is dishonest; it simply answers a different question. If you are making the oil yourself rather than buying it, the food-safety half of the picture has to come from somewhere else, and this is that half.
A low-FODMAP diet is a structured elimination and reintroduction protocol, and it is best followed with a dietitian rather than improvised. Nothing in this article is dietary advice; it is about handling oil safely.
Three Objections Worth Taking Seriously
“People have made this for generations and nothing has happened.” Mostly true, and worth stating plainly: botulism is rare. But rarity is not the same as safety when the consequence is measured in months on a ventilator, and the Illinois episode shows what the tail of that distribution looks like. The whole reason it is rare in commercial products is that the regulator intervened after 1989. Home kitchens received no such intervention.
“I sterilise the jar, so it is fine.” This is the most common misunderstanding, and it is worth being blunt about. Sterilising the jar addresses the wrong thing. The spores come in on the onion, not on the glass, and they survive the temperatures a domestic kitchen reaches. A sterile jar containing fresh onion under oil is still a jar of fresh onion under oil.
“Surely I would notice if something was wrong.” No. This is the reason the guidance is worded as firmly as it is. The CDC's position is that you cannot see, smell or taste the toxin, and the outbreaks bear that out — in the Illinois case the vehicle was a sandwich that people ate happily. Sensory checks are not a control for this hazard, which is why the control has to be the method and the clock instead.
