Wild Groves Olive Oil: What Their Published Numbers Actually Tell You

Wild Groves olive oil arrives with more numbers attached to it than almost anything else a normal shopper will pick up. Go to a product page on wildgroves.com and you are given a polyphenol count with its units and its testing method, a free fatty acid percentage, a peroxide value, three separate ultraviolet absorbance coefficients, the month the fruit was picked and whether it was picked by hand. That is a spec sheet, not a label, and it is rarer than it should be. The useful question is not whether the numbers are impressive — several of them are — but what each one actually measures, and what a buyer can legitimately conclude from them.

The Short Answer

  • Wild Groves is a Northern Californian producer based in Newcastle, in Placer County, with a tasting room open to the public. The Lucero family has farmed olives in Northern California for four generations, principally for table olives; Dewey Lucero pressed his first oil in 2005 and founded Wild Groves with his wife Katie in 2016.
  • They publish real chemistry, with units and a method. Each extra virgin product page states polyphenols in gallic acid equivalents per kilogram measured by HPLC, free fatty acidity as % oleic, peroxide value, and K232, K270 and Delta-K.
  • Every published value sits comfortably inside the extra virgin limits. Their Picual, for example, is stated at 0.20% free acidity against an extra virgin ceiling of 0.80%.
  • The certification is named, and so is the panel. Product pages state the oils are "Certified 100% EVOO by: California Olive Oil Council (COOC)" and "Applied Sensory Panel" — a named third-party taste panel, which very few brands identify.
  • The one gap is the laboratory. The method is named but the laboratory that ran it is not, and there is no test date, lot number or downloadable certificate. Without those, a published figure is a well-specified self-report rather than an independently traceable result.
  • A bigger polyphenol number is not automatically a better oil. Polyphenols drive bitterness, pungency and shelf stability. Choosing between a 1,100 and a 372 is a decision about flavour and use, not a quality ranking.
  • Our own oil is single-estate Moroccan — rain-fed, organically grown, cold-pressed within hours of harvest, unfiltered. We do not currently publish a polyphenol figure or any lab chemistry, and on that measure Wild Groves is plainly ahead of us.

Who Wild Groves Are, and What the Site Says

The live site is wildgroves.com, and it is current — the oils on sale at the time of writing carry a November and December 2025 harvest. The company operates out of Newcastle, California, north-east of Sacramento, and runs a tasting room at Old State Highway in Newcastle. Growing regions vary by oil: some are listed as Newcastle, others as Northern California – Sacramento Valley.

The award claim is worth reading precisely, because it is not the one people assume. Wild Groves' about page describes founder Dewey Lucero as "the most awarded olive oil taster in America", with over 400 top awards including five "Best of Shows" at the California Olive Oil Council's annual competition. The credential attaches to the person who tastes and blends every oil that leaves the facility, not to the company's marketing department — and the individual oils then carry their own dated competition results, such as Best of Class at the Los Angeles International Extra Virgin Olive Oil Competition 2026 for the Picual.

On certification, each product page names two bodies: the California Olive Oil Council and Applied Sensory Panel. The COOC seal is the stricter-than-international Californian scheme we set out in full in our guide to California olive oil brands, so we will not re-explain it here. Naming the sensory panel as well is the unusual part. Most brands that mention a panel at all leave it anonymous.

What Each Number on the Spec Actually Measures

Five measurements do almost all the work in olive oil chemistry, and between them they answer two different questions: how well was this fruit handled, and how much has this oil already aged. The limits below are the extra virgin thresholds in the International Olive Council trade standard (COI/T.15/NC No. 3/Rev. 22, June 2026) and in Commission Delegated Regulation (EU) 2022/2104, which since 2022 has replaced the long-cited Commission Regulation (EEC) No 2568/91; the analytical methods now sit in Commission Implementing Regulation (EU) 2022/2105. The numbers themselves did not change with the citation, and the IOC standard agrees on every figure.

Note what is not in that list. Polyphenol content is not a grading criterion at all. An oil can be flawless extra virgin with modest phenolics, or fail the grade with very high ones. Phenolics tell you about flavour intensity and keeping quality, not about compliance.

Wild Groves' Four Single-Varietal Oils, As Published

Here are the figures exactly as they appear on Wild Groves' own product pages at the time of writing. Reading them side by side is more informative than reading any one of them alone.

Three things fall out of that table immediately. First, every value is inside the extra virgin limits, and the acidity figures are well inside them — 0.13% is a genuinely low number. Second, the polyphenol spread is close to threefold across four oils from the same producer in the same season, which is a cultivar effect rather than a quality effect; Picual and Coratina are both naturally robust varieties, as we describe in our guides to Picual olive oil and Coratina olive oil. Third, the two oils with the highest K232 are also the two with the highest phenolics, which is exactly what you would expect and is a small sign that these numbers were measured rather than assembled.

Why 1,100 Is Not Simply Better Than 372

Wild Groves groups its most phenolic oils into a "Highest Polyphenol" collection, and the collection header prints the figures directly. It is a reasonable way to organise a range, but it invites a conclusion the chemistry does not support: that the buyer should simply reach for the largest number.

Polyphenols are what make an olive oil bitter at the back of the tongue and peppery in the throat. They are also what keeps it from going stale. A 1,100 oil is assertive — excellent over beans, bitter greens, grilled meat or a robust soup, and capable of dominating anything delicate. A 372 Arbequina is soft, buttery and far better suited to a light salad, a cake or a delicate white fish. Neither is the better oil. There is also a units problem that catches almost everyone. Wild Groves' figures are expressed in gallic acid equivalents — a total-phenolics measurement calibrated against a reference compound. The one authorised health claim in this space is written on a different basis entirely. Under Commission Regulation (EU) No 432/2012 the permitted claim is that "Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress", and its conditions of use state that "The claim may be used only for olive oil which contains at least 5 mg of hydroxytyrosol and its derivatives (e.g. oleuropein complex and tyrosol) per 20 g of olive oil. In order to bear the claim information shall be given to the consumer that the beneficial effect is obtained with a daily intake of 20 g of olive oil."

That is a measurement of specific named compounds, not of total phenolics in gallic equivalents. A large total-phenol figure makes it more likely that an oil would meet the claim's threshold, but it does not demonstrate it, because the two tests are not measuring the same thing. Wild Groves does not make that claim, and we are not making it on their behalf.

The One Detail Still Missing

Naming HPLC as the method is most of the battle. What is not published is who ran it. There is no laboratory name against the chemistry, no test date, no lot or batch code, and no downloadable certificate of analysis. The sensory panel is identified; the analytical laboratory is not.

This matters less than it would for a brand publishing a bare unlabelled figure — the mirror case we examined in our piece on Wonder Valley olive oil, where the number arrives with no unit and no method at all. Wild Groves is several steps ahead of that. But the last step, from a well-specified self-report to an independently traceable result, is the one that lets a sceptical buyer check rather than trust. Two smaller absences are worth noting without weighting them heavily. Wild Groves does not state whether the oils are filtered or unfiltered, and does not publish the sensory panel's actual scores — only that the panel certified the oil. Both are category norms rather than failings; almost nobody publishes a panel's median fruitiness.


The Objections Worth Taking Seriously

"A wall of numbers is just science-flavoured marketing." It would be, if the numbers were unfalsifiable. These are not. A brand that prints a Delta-K value of −0.0080 has published something a competitor, a journalist or a laboratory could contradict. Publishing falsifiable specifics is the opposite of marketing, and it should be the norm rather than a differentiator.

"You sell olive oil, so you will find fault." The honest position is that Wild Groves publishes considerably more chemistry than we do. We publish none: our oil has not been lab-tested for phenolics, acidity or peroxide value, and until it is we will not imply figures we do not have. If a full published spec is what you are shopping for, they have one and we do not.

"Californian oil cannot compete with the Mediterranean." On this evidence that is simply not true. A 0.13% free acidity with a December hand harvest is the profile of carefully handled fruit milled quickly, wherever the grove happens to be. Provenance is a story about a place; the spec is a story about how the fruit was treated, and it is the second one that ends up in the bottle.


How to Use a Published Spec When You Are Buying

If a brand gives you a spec sheet, here is a sensible order to read it in.

  1. Harvest date first. Everything else is a snapshot taken at an unstated moment; the harvest date tells you how long ago that moment was.
  2. Free acidity next. It is the cleanest single indicator of fruit condition and speed to the mill. Well under 0.8% is a good sign.
  3. Peroxide value and K232 together. Both climb with age and poor storage. Low values on a recent harvest mean the oil has been looked after.
  4. K270 and Delta-K as integrity checks. They are less about quality than about the oil being what it says it is.
  5. Polyphenols last, and as a flavour decision. Match the intensity to what you cook, not to what sounds most impressive.
  6. Then look for the source of the numbers. Units, method, laboratory, date. Each one you get moves the figure further from a claim and closer to a result.

We will not tell you Sidr & Stone is the best olive oil — that would be the very claim this article warns against, and on published chemistry Wild Groves is ahead of us. Final Thoughts

Wild Groves does something the olive oil category should have normalised a decade ago: it tells you what is in the bottle in terms a chemist would recognise, and then tells you when the fruit was picked. Set against a shelf of oils that offer a country of origin and an adjective, that is a substantial act of transparency, and it deserves to be said plainly rather than damned with faint praise.

The remaining step is small but real. Add the laboratory's name and the date of the test to those figures and they stop being a claim about a result and become the result itself. That is the difference between a buyer having to trust the producer and a buyer being able to check.

In the meantime the practical advice is the same one the spec sheet itself teaches. Read the harvest date before the polyphenol count, treat a high phenolic number as a flavour decision rather than a league table, and give more weight to any figure that arrives with a unit, a method and a source attached.
